Recently, James Corden announced that they're finally revamping his now infamous Spill Your Guts segment after it was criticized for painting Asian delicacies in a negative light. If there's anything we can learn from what happened, it's that food is deeply ingrained in people's culture and history, and there's more to these dishes than their unusual ingredients.

Unfortunately for colonized countries like the Philippines, that also means our food has a very complicated history behind it--but that shouldn't stop us from owning our story, and celebrating our colorful cuisine.

One province proudly paving the way in the industry is none other than Pampanga, the Culinary Capital of the Philippines. "Kapampangans have long been proud of their food heritage," says DOT Sec. Berna Romulo Puyat in this Summit Originals video. "From the colonial to the native, and the exotic."
