Parma and Roasted Melon Salad Mesclun with Orange Balsamic Dressing


1 whole melon
150g parma ham
½ cup / 600 mL olive oil
¼ cup honey roasted peanuts
¼ cup fresh orange juice
¼ cup balsamic vinegar
¼ cup parmesan cheese
Salt, pepper, & sugar to taste


  1. Pan sear melons in a pan with a little bit of butter and sugar. Let cool and wrap with parma ham.
  2. In a bowl, mic together olive oil, orange juice and balsamic vinegar, sugar, salt and pepper to make vinaigrette.
  3. Arrange vegetables on a platter or bowl, pour dressing and crushed peanuts. Top with melon and parma ham.
