Sweet Valentine: Homemade Truffles

Don't have budget for fancy chocolates? Why not make your own? Here's an easy-peasy recipe!

If you are looking for another truffle recipe after enjoying the Oreo Truffle recipe we shared with you Candy Girls before, you're in for a treat! We introduce the recipe for "Truffle Surprise." The little balls of chocolate you could prepare yourself are filled with cream mixed with... gummi bears! Yes, you read it right, gummi bears! It may sound exotic or weird but that's why it's called the "Truffle Surprise."

What you'll need:
1/3 cup heavy cream
12 oz. or 360g white candy melts
100g gummi bears
250g semisweet or bittersweet chocolate, for dipping (other colors of candy melts may also be used)
Makes: 20-24 truffles


  1. In a medium saucepan, heat the heavy cream until hot. Do not boil. Once hot, remove from the saucepan from the heat and add the white candy melts. Stir until candy is completely melted.
  2. Transfer the melted cream into another bowl and then fold in the gummi bears to create the truffle mixture.
  3. Refrigerate the mixture until it is firm. This would take at least an hour.
  4. Get another medium saucepan (or wash the medium saucepan used earlier) and melt the semisweet/bittersweet chocolate for dipping. Once melted, set aside your melted chocolate to cool for at least 2 minutes.
  5. Take out the mixture of cream and gummi bears from the ref and by using a small scoop or a spoon, form the truffle mixture into small balls. Dip the truffle balls into melted chocolate and then place each one on parchment-lined cookie sheets or on mini-cupcake liners. If desired, sprinkle some rice crispies, ground nuts or candy sprinkles onto the truffles.
  6. Refrigerate until ready to serve or package.
